A Total Crock

I believe I have mentioned a time or two that I am Southern,
and Sunday Dinner is kind of sacred to those of us with a drawl.
So before we start a busy day, let's get out the crock pot and start a nice hearty meal that can simmer all day.
Here's how this gal makes her Best Ever Pot Roast.
You'll need:
A 12 quart crock pot. Scale this recipe accordingly. For example, if you have a 6 quart, halve everything. That's all the math I'm doing.
a 4 pound beef roast, the cheaper the better
10 peeled carrots in chunks
8 peeled onions, quartered
8 unpeeled potatoes, sliced bite sized
4 ribs of celery sliced bite size
1 pound of button or baby portobellos, scrubbed and whole
Fresh garlic
Roasted garlic
3 cans of beef broth
3 cans of reduced fat condensed cream of mushroom soup
Marsala wine
Cabernet
1 envelope onion soup mix
Adobo seasoning
Olive oil
1 tablespoon of butter
Fresh rosemary
We're going to start this around 10:00 AM.
Drizzle some olive oil into a hot heavy saute pan. Place your roast in the oil, sprinkle it with Adobo and brown the meat on all sides.





Once that's done, remove the roast and place it in a crock pot that's been slathered in cooking spray.
Add the butter to the pan, then the onions and roasted garlic.
If you aren't keeping roasted garlic in the house, you're missing out.

Saute until the onions are just a little tender, then pour them over the roast in the crock pot.
Deglaze the pan by pouring Marsala wine into it and scraping the bits off the bottom. 
Add this to the crock pot as well.
Add the veggies and potatoes...
...the rosemary and 1 tablespoon of fresh garlic...
...the onion soup mix, 2 cups of cabernet and the broth...
...then cover, set on high, pile into the car and head for a Greek Festival!











 When you return home, exhausted from all the shopping and dancing,
add the mushroom soup, give the whole mess a good stir, and go turn on a movie.
It needs about an hour and a half more to blend the flavors.
Dinner should be ready at 5:00.
How's that for easy?

Ok..... as your best friend, I put complete faith in you and blindly followed you to pot roast heaven. Ok maybe not so blindly given the plethora of texts back and forth Saturday morning as I was prepping :-) I had to cut the recipe in half as I "only" have a 6qt crock, and in doing so had to make decisions regarding things like.... more broth or more cream of mushroom soup? ...which were killing this novice crocker LOL Thanks for the guidance, Sunny... It all worked out in the end and we had and amazing meal last night. I was serving 5 and made some sauteed string beans and shrooms on the side. What I ended up with is enough food to have another complete dinner for three. MM MM MMMMM I can't wait til leftover night!!!!
