Lemon Meringue Pie Thing


The slightly edited version, because we're cheap and we buy our pie crusts:
1/4 cup sugar
2 Tbsp. cornstarch
2-1/2 cups water
2 pkg. Jell-o lemon flavor gelatin
1-1/2 tsp. lemon zest
4 cups Jet Puffed miniature marshmallows
1/4 cup milk
2 cups thawed cool whip
Pie crust

Mix remaining sugar and cornstarch in medium saucepan. Gradually stir in water until well blended. Bring to boil on medium heat; cook 8 min., stirring constantly. Remove from heat. Add dry gelatin mixes and zest; stir until gelatin is completely dissolved. Refrigerate 1 hour or until slightly thickened, stirring occasionally. Pour into crust.
Microwave marshmallows and milk in large microwaveable bowl on HIGH 1-1/2 min. or until marshmallows are completely melted, stirring after 1 min. Stir until mixture is well blended. Refrigerate 15 min. or until completely cooled. Whisk in COOL WHIP; spread over gelatin mixture. Refrigerate 3 hours or until firm

Or you can go get a box (or two, depending on your desired number of pies) of Jell-o lemon pudding mix (we used the kind that isn't 'instant pudding,' but granny has the tenancy to try to be difficult about things and likes to do them 'the old fashion way' [How making pudding from a box is 'the old fashion way,' I will never know, but that's a story for a different day.] but instant would probably work just as well)
Also add at least one feline overlord for supervision purposes.

Also the more Stand Mixer, the better. Stand Mixers are awesome. Especially if they come with a whisk attachment.
...And as a note, from experience, you don't need a very big sauce pan. Like, a small or medium one will work perfectly, even for two pies.

The mirangue doesn't need to be pretty. Neither does the oven.
