Strawberry Lemonade Cake

Savannah has started dabbling with make up.
Thank goodness, this is as far as it's gone so far.
Considering she's nearly 18, I'm a lucky woman.
Unfortunately, since I've never worn the stuff, she's on her own as far as technique.
 
This has not deterred our baking together, and the results of our latest efforts are a little neater.
They're certainly more tasty.
We popped over to Easybake and borrowed *coughcough* her amazing recipe for 
Strawberry Lemonade Cake.
We used her concoction to the letter; I'll be going back and tweaking it to include a from-scratch cake and a slightly different icing to cut the chemicals, but in the meantime...
THIS WAS WORTH THE CHEMICALS!!!
We whipped it up Saturday.
I needed to make a new dessert for Sunday. The cake was GONE.
We added cat hair. It's impossible not to. This ingredient is optional and up to you.

INGREDIENTS:
  • One box of strawberry cake mix (plus oil, water and eggs as directed on box)
  • 8oz. Philadelphia Cream Cheese (softened to room temp.)
  • 1 packet (0.23oz.) of Kool-Aid Lemonade
  • Yellow food coloring gel (as desired for color)
  • 2cups Jet-Puffed Marshmallow Creme
  • 8 oz. Cool Whip Topping
  • Fresh strawberries to garnish.
DIRECTIONS:
  • Make cake according to box and bake in 2- 9 inch round cake pans as directed.  Turn finished cakes over on cake racks and allow to cool completely.
  • Cream together cream cheese, lemonade and yellow food coloring until smooth.
  • Mix marshmallow creme in and then mix in Cool Whip until completely smooth.  Refrigerate until cake is cooled and cut.
  • Cut each cake layer in half.
  • Alternating layers of cake with layers of filling, assemble cake.  End with layer of filling.
  • Top with sliced strawberries.
  • Refrigerate and serve chilled.

The icing is light and fabulous. It also has a mind of its own.

I recommend wax paper under the cake when icing to clean the plate up easily.
Or have a couple of college aged boys assist when you aren't looking.
 Garnishing is simple and the more berry slices, the better.
 

Strawberry is her favorite flavor; hence that grin.


 Perfect pairing: a nice glass of I Can't Believe It's Not Wine.


This was summer on a plate, really. If you're enjoying some snow, or just plain old cold weather,
this will transport you to a porch in the sunshine.

  2. Mmmmmm!! Strawberry is one of my favorite flavors too.....secondonly to lemon. Im a sucker for all things lemon
