Cake Balls. That internet sensation that's more decadent than any recipe I've ever read. Jami over at The Blackberry Vine has combinations for these for any occasion, and I figured my oldest son's 19the birthday was the perfect excuse to try these out.
First, bake a cake. We chose devil's food to satisfy Sammy's chocoholism.
Allow it to cool completely and then crumble it into a bowl.
Next, add a tub of frosting. We went with cream cheese.
Mix it all up.
Once that's all combined...
...line a cookie sheet with wax or parchment paper.
Here comes the messy part. Start rolling your cake mixture into 1 1/2 inch balls.
Lay them out on the cookie sheet and pop them in the freezer for an hour.
Now, generally at this point you would melt some baking chocolate and dip each individual sphere, coating it evenly, creating an elegant truffle like confection. However, it's August in South Florida. It was 95 degrees and ridiculously humid, so I improvised. I started stacking the balls in a pyramid, drizzling with melted white chocolate as I went.
A few multi-colored candy sprinkles for a festive touch...
...and 20 sparkler candles to set it off just right!
20 candles. My toddler is 19.
How did that happen?
The whole thing was gone in a matter of 10 minutes, by the way.

We made them for the Sweet 16 and I like your idea of covering the whole mound in melting chocolate because the dipping was the hardest part of the whole thing...to make them looks smooth and perfect wasn't easy. We did cake pops and they looked cute and were gobbled up in seconds as well. I love your sparkly candles!
