I don't know if you tried that after my lengthy comment or if it was a coincidence, but hurray for having nice big scallions!! They look great!
I thought it would work with leeks too, since they seem to just be gigantic scallions, but that was just theory. I planted 2 leek tips many months ago, and one died. The other is still there, but your scallions are probably bigger in diameter. Disappointing, but maybe I'll try again somewhere else in the garden and leave more of the stalk out.
Also, if you get a clove of garlic that has a sprout coming out, you can plant that clove. It'll grow a bulb back with more cloves inside. Google "planting garlic clove."
I replanted a piece of ginger with a sprout coming off and it struggled to get through those little cold snaps we have. I believe the ginger will grow larger underground, but what's nice is that ginger plants look really pretty in the yard. I think some home/garden places even sell them as yard plants, not possibly edible ginger.
